Dry aging is how beef was aged until wet aging became the predominant process in the mid-1980s. Our dry-aged beef is stored in our custom-designed, dry-aging cooler where a complex process incorporates an intricate and delicate balance of time, temperature, air circulation and humidity. Over time — as the beef ages openly, exposed to the elements inside the cooler — the beef’s enzymes break down and tenderize the meat, giving it a unique flavor and ensuring utmost tenderness. It all starts with what Bell & Evan's does and does not feed their chickens. They’re raised on an all vegetarian diet of corn, extruded and expeller pressed soy beans, vitamins and minerals... and plenty of fresh well water. No antibiotics ...ever.
